		<description>Isabel, have you ever tried portobello mushrooms as the burger buns?  Marinate the mushrooms (whole) in balsamic vinaigrette, garlic and olive oil- timing depends on how strong you want it to taste.  At this point you can bake them or you can put a little bread crumbs on them and brown them in olive oil quickly.  Spread goat cheese on both sides and cook in the oven (I like it wrapped in tinfoil so you get all the juices mixed together, but it can make it a little soggy) and then serve over rice or pasta or salad-oooh this is making me hungry!
