At Last, The Christmas Cookie

Well hello, it has been a while. On Friday, I clawed my way out of my last law book. It took a few days for my hands to regain feeling… I woke up this morning and determined that I was well enough to wield a spoon. And so, on December 22, I made my first batch of Christmas cookies. Then I made another. I also took a long walk and saw some beautiful Connecticut landscapes. This is what I have been waiting for.

Chocolate Chip Cookies with Nuts and Oats

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, (2 sticks) softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large egg
  • 2 c semi-sweet chocolate chips or chunks
  • 1 cup chopped walnuts
  • 1/2 c raw oats

Preheat oven to 375 degrees F.

Combine flour, baking soda and salt in small bowl.

Beat butter, sugars and vanilla extract in large bowl until creamy.

Add eggs one at a time, beating well after each addition.

Gently add flour mixture, stirring until just combined.

Fold in chocolate, nuts and oats.

Drop by rounded tablespoon onto ungreased baking sheets, pressing each ball flat for a crispier cookie.

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
